Gluten Free Rocky Road
Ingredients
150g Dark Chocolate (always check packaging for "May contain" statement)
200g Milk Chocolate
50g Butter
70-80g GF Marshmallows
2 Fry’s Turkish delight bars( you could use other gf Turkish delight - I like this one)
50g roasted unsalted peanuts (Could use pistachio or other nuts if prefered)
2 Gluten Free shortbread biscuits (I used Butterfingers GF Pure butter short bread)
Method
Prepare a lamington tin or baking tray with a layer of baking paper, this will make it easier to cut the Rocky Road up and to remove it from the tin.
Using kitchen scissors (or any scissors as long as they are clean and chemical free), and chop marshmallows into a large glass bowl. You can use a knife instead of scissors if you prefer, I find the scissors quicker and easier.
Chop Turkish delight, into small squares into the same bowl.
Break or chop shortbread biscuits into small chunks, also in the same bowl.
At this point I use a spoon to gently mix the Marshmallow, Turkish Delight and Short bread so they are combined.
Using a heavy based sauce pan on low heat melt dark and milk chocolate and butter together until smooth and there are no lumps. Stir constantly so that the chocolate does not stick and do not let the mixture boil.
Once melted pour chocolate over the ingredients in the glass bowl. Gently mix it through the ingredients so as not to break op the shortbread too much.
Once Marshmallow, Turkish Delight and Short bread are coated in chocolate pour the mixture into the lined tin. Use a spatula to scrap out any chocolate stuck to the bowl. Use the spatula to evenly spread the mixture over the tray. Once you are happy with the way it's spread out place the tray in the fridge to set (approximately 30 minutes). Once set you can take the tray out and cut rocky road into squares for serving.
This makes a great gift, could package it up in to a pretty Jar or in cellophane bags tied with a ribbon.
Can be kept in a sealed contained in the fridge for a couple of weeks (if it doesn't all get eaten first)
You could add other ingredients such as gluten free fugde etc too for something different.
