Amazing Anytime Gluten Free Chocolate Cake

Ingredients
1¾ cups GF self-raising flour (I use Orgran)
½ tsp bi-carb of soda
¼ tsp salt
½ cup cocoa
1¼ cups sugar
125g butter (Melted)
1 cup milk
1 tbsp vanilla extract
2 eggs (Extra Large, or 3 if using smaller eggs)
Note: Always check ingredients for gluten and "may contain" or "manufactured on equipment that also processes", statement particularly dry ingredients, like bi-carb and cocoa.
Method:
Preheat oven to 180°C. Grease 8” (20cm round) Cake tin with butter or oil.
Melt butter in pan on the stove, or in the microwave. Put liquid ingredients to mixing bowl and mix until combined. Add sugar and mix briefly. Add other dry ingredients, and then mix until it forms a smooth batter. Bake cake for 60 minutes or until skewer inserted comes out clean.

Ok, so this picture looks terrible but it's from before I learned cake decorating.
You can use this cake for anything. It can be cupcakes or slice it across the middle and fill with Jam and Cream, or make coffee icing and fill the middle and cover the top. We have even covered it in chocolate icing and put little Easter eggs on top.
