Zeppole - Gluten Free

Zeppole is an Italian treat usually made at Christmas-time. They are similar to doughnuts. My Nonna always used to make a batch of these and a batch of Fruscoli (Crostoli) on Christmas eve.

Ingredients
450g Plain GF Flour (I use Orgran)
2 Medium Boiled Potatoes
7 gram sachet of active dry yeast
Pinch of salt
Limoncello or Lemon extract (or essense)
White sugar or icing sugar
2 Cups lukewarm water
Olive oil for frying
Method
In a large bowl add the flour and the mashed potatoes
Disolve the yeast in a separate bowl with the warm water, and add a pinch of salt
Mix all the ingredients well and work the dough for about 5 minutes, or use a standmixer
Cover the bowl with a cloth and leave th rise in a warm environment for an hour.
Use a deep frying pan or saucepan will a lot of oil (enough for the dough to float)
Drop spoon fulls of dough (I used an old tablespoon) into the oil
Turn the dough in the oil until they are a golden colour on all sides
Remove Zeppole from the oil and quickly sprinkle generous amounts of sugar on all sides, you can also use icing sugar if you prefer.
