Italian Apple Cake

This is an old family recipe. It uses olive oil instead (southern Italian traditionally didn't use butter) and is naturally dairy free. I converted in to gluten free a few years ago. Yummy served as is or warm with cream or ice-cream.
Ingredients
3 eggs 1 Cup of sugar 1 Cup of Oil 1.5 Cups GF Flour 2 tsp Baking powder 2 tsp Vanilla 3-4 Cups of apple Slices (Fresh Granny Smith are best) Sugar and Cinnamon to sprinkle on cake
1. Peel and cut apples into slices

2. Beat Eggs at highest speed until light and fluffy 3. Reduce mixer speed and add sugar 4. Continue to beat and add oil 5. Add together flour and baking powder 6. Add Vanilla 7. Pour half the batter into the pan 8. Add apples on top and sprinkle with sugar and cinnamon

9. Place remaining batter on top and spread out over apples 10. Sprinkle extra sugar and cinnamon (cinnamon first then sugar on top looks nicer)
11. Bake for 60+ minutes at 180 degrees until skewer comes out clean. It's normal for there to be some cooked apple on the skewer.

Best eaten on the first day, and then tastes amazing heated up served with cream or icecream.
