Gluten Free Choc Chip Cherry Coconut Muffins

Makes 16 Muffins

Ingredients

  • 250g GF self raising flour

  • 1 teaspoon baking powder

  • 120g cold unsalted butter cubed

  • 80g caster sugar

  • 150g milk or plain chocolate chips

  • 1/3 cup coconut moist flakes (if you use desicated coconut you will need more milk)

  • 50g Glace Cherries cut in half

  • 2 x-large eggs , lightly beaten

  • 250ml milk (1 Cup)

  • 1 teaspoon vanilla extract

Method

  • Preheat the oven to 180c & grease a 12 muffin pan and 4 holes of another 12 muffin pan.

  • Mix the flour and baking powder together in a large bowl. Rub in the butter untill the mixture is like breadcrumbs. Stir in the sugar.

  • In the bowl of your stand mixer add the eggs , milk and vanilla extract together , then pour the dry mixture all at once into the wet ingredients and mix briefly until just combined.

  • Add chocolate chips and coconut, mix through gently with a spatula until combined

  • Spoon the batter into the muffin cases and bake for 20 minutes or until risen , golden and firm to touch. cool in the tin for 10 minutes.

  • after 10 minutes of cooling in the tin , transfer to a cooling rack or serve straight away.
